Olive is normally soaked in brine (salted water). Olive is not a vegetable but is a fruit. Then how come we don’t soak apples in brine? Or make oil out of apples? Some ideas for the enterprising entrepreneur out there.

Meanwhile, for me, eating olives is good enough. And these Italian olives from Sicily by M&S is good. The texture is crunchy and the olive taste like, well, good olives. It is not overly salty, letting the taste of the olives come through. It’s really good. Just be careful of the stone in the middle in case you get too carried away.
